A day at the Salem Farmers Market

43 Church prides itself on sourcing as many local local ingredients as possible. Right next door to us, every Thursday, is the Salem Farmers Market where Chef Doug visits his local farmer and purveyor friends to purchase items to use in his daily specials. This week we were honored to participate in the Farmer’s Market and our new pastry chef Saskia demonstrated the basics of making a fruit compote which could be used in any manner of ways from crepes to a great garnish for a poultry dish.
